A deeply comforting, slow-simmered pot of goodness. Butternut Squash Soup warms the soul with rich, layered broth.
Instructions
- Gather and prep all ingredients. Finely chop garlic, onions, and any fresh herbs required for the recipe.
- In a large Dutch oven or pot, heat olive oil or butter over medium heat. Sauté the aromatic onions, garlic, and ginger until fragrant and translucent (approx. 5 minutes).
- Stir in the remaining vegetables, broth, tomatoes, and key ingredients. Bring the mixture to a boil, then reduce heat to low, cover, and let simmer to absorb the spices.
- Add a final pat of butter or squeeze of fresh lemon juice. Simmer or sear for another 2-3 minutes until the sauce thickens and the main protein is fully cooked.
- Remove from heat. Garnish with scallions, bean sprouts, chili oil, and a squeeze of fresh lime. Serve immediately while hot and enjoy!
